Very Berry Cheesecake Lollies
As we are approaching week 4 of the British school holidays we headed out to pick blackberries with my dad on Monday, which last year didn’t happen until the last week of the holidays.I made some very berry cheesecake lollies with half of what we picked.The kids adored them so much we’ll being making some more when we head out to pick some more blackberries again this week.
Very Berry Cheesecake Lollies
100g caster sugar  
200g berries (you can use one type of fruit or a mix)
200g soft cheese
1. In a small saucepan put in 100 ml of water with the sugar.Heat it gently, stirring occasionally.Once the sugar has dissolved, bring to the boil and boil rapidly for 2 minutes.Remove from the heat and stir in your fruit.Leave to get cold.
2. Place the fruit mix in to food processor and blitz for a few seconds.Push through a sieve to get all the pips out (depends on fruit of course).Put the purée  back into the clean food processor adding the soft cheese.Blitz until it comes together.
3. Divide the mixture between 4-6 ice lolly molds.I made 4 with this mix.Leave in the freezer to freeze for about 3-6 hours.
