Vegetarian Toad In The Hole

Fish Free Friday

 

This week’s Fish Free Friday recipe is for vegetarian toad in the hole.Fish Free Friday is a campaign run by the vegetarian society to get you to replace your traditional Friday fish dinner with an alternative vegetarian meal.I served this with mashed potato, cava nero (it’s from the kale family) and vegemite gravy which I have written in italics so you have a complete meal.

 For the toad in the hole

A packet of 8 frozen meat free/ vegetarian sausages

100g plain flour

A pinch of salt

1 egg

125ml milk (1/2 pt)

125ml water (1/2 pt)

25g oil

For the mashed potatoes

1 bag of old potatoes, peeled and cut into small cubes

50ml milk

25g butter/spread

For the greens

Cava nero or green cabbage, sliced

25g butter

For the gravy

Onion gravy granules

Vegemite

1. First make the batter.Sieve the flour and salt into a large bowl and make a well in the centre.Break the egg into the bowl, add half liquid and whisk to a smooth mixture.Gradually add the rest of the liquid and allow the batter to rest.

To make the mash potato: Boil a kettle and place in your peeled potatoes into a large  pan and cover with the hot water.Bring to the boil and reduce the heat.Cook for 20-25 minutes with a lid on.

3.To cook the sausages.Use the oil to brush a middle-sized roasting tray or oven proof dish.Place the frozen  sausages into the tin and cook at 200°c.Cook for 15 minutes, giving a little shake so they brown evenly.

4.Turn the oven up to 230-250°c (gas 8-9).Pour over the batter over the sausages and cook for 15- 20 minutes.

To cook the greens: Add the cava nero or green cabbage to a medium pan.Boil a kettle and put in enough water so it comes half way up the amount of greens.You don’t want to submerge the vegatable.Season with salt and pepper and add a small amount of butter and margarine.Cover and bring to the boil , turn it down to a medium heat and replace the lid.This steams the greens rather than boiling which in my opinion is horrible.Cook for no more than 10 minutes, 15 minutes maximum.

Drain and mash the potato, adding seasoning and butter and a little milk.When the greens are cooked remove and keep the water.

To make the vegemite gravy:Add enough hot water to the water that was used to cook the greens to make up a pint.Bring to the boil and 3 tbsps of onion gravy granules and 1 tbsp of vegemite.Reduce the heat and whisk until thick.Adjust if it’s too thick/thin.

4. Cut the batter and sausages into six .Serve the vegetarian toad in the hole with the fluffy mash and tender greens  and lashings of gravy.
